  1. mix together dry spices and set aside.

  2. set a medium pan, along with your ghee (2 Tbsp) (or oil), over medium heat. once shimmering, add in your fresh chilis (3 small) and garlic (4 cloves), and allow them to gently fry for around 1 minute – until the garlic turns a light caramel color. be attentive in this stage, as both will burn very quickly and end up making the dish taste very bitter.

  3. add in your day old rice (2 cups) and stir fry in the oil, similar to how you would with fried rice. once the garlic and chilis are mixed in throughout the rice, leave it still in the pan and allow it to crisp in the hot fat. after 1-2 minutes of toasting the rice, turn off the heat and stir in your dried spice mixture along with ½ of your lime’s juice. adjust seasoning with salt and pepper to taste, and transfer to a serving dish.

  4. before serving, add the remaining lime juice as desired, and finish with fresh lime zest.
