cha soba with creamy peanut + sweet soy milk ‘tsuyu’

for whatever reason, noodles are typically excluded from the breakfast menu. so i wanted to figure out a way to make a breakfast noodle dish that still felt like breakfast food – which, for me, exists in the realm of gently sweet and comforting flavors. i pulled inspiration from the usual structure of soba noodles with dipping broth, as it’s one of the lightest noodle dishes i could think of–but it’s just as good served as one package.
Instructions
boil noodles (100 g) according to package instructions, and reserve ¼ cup of the noodle cooking water if you opt to mix instead of using it as a dipping sauce.
once cooked, rinse the noodles (100 g) under cold water to improve their texture and give them a slight chew, or “QQ.”
mix together the ingredients for the sauce, and if combining, toss the noodles into your mixing bowl along with some of the reserved water (as needed).
garnish with toasted sesame seeds. serve chilled or warm.
