this pound cake is the quintessential summer treat. every time i make it, i am instantly transported to a fictional world in which i lay by the pool, sunbathing all day at my villa on Lake Como without a care in the world. the bright sweetness of summer’s favorite berries are met with a gentle sophistication from the herbaceous candied basil, making for a complete explosion of italian summer in one bite.
Instructions
while your oven is preheating to 350°F, mix together your dry ingredients and wet ingredients separately for the cake batter. sift the dry into the wet, being careful not to over mix. add in your diced strawberries (1 cup) and pour the batter into a greased / parchment lined loaf pan.
bake for 50-60 minutes, until the center is set and a cake tester inserted comes out clean.
in the meantime, candy your basil leaves (8–10 leaves) by whipping the egg white (1) (with a splash of water) until frothy, brush it over, and sprinkle with sugar (2 Tbsp). allow them to dry completely, about the same about of time it takes for the cake to finish baking.
while the cake cools, prepare your glaze by pureeing the strawberries (½ cup) with the milk (2 Tbsp) and vanilla (1 dash), and sifting in the powdered sugar (2 cups). trust me, sift it!!
brush on the glaze and once it sets, slice and serve
