creamy tahini + miso noodle stir fry

Instructions
first, mix together the ingredients for the sauce and prepare everything you may need for the final stir fry. everything happens pretty quickly in the pan, so it helps to have everything easily accessible once you get going.
boil noodles (1 package) according to package instructions, and reserve ¼ cup of the cooking water to adjust the thickness of the sauce later on. when finished, rinse under cold water to preserve the texture of the noodles and give them a slight chew, or “QQ.”
in a large nonstick pan over medium heat, sauté your garlic (1 clove) and ginger (1 inch piece) in 1 tbsp cooking oil. then, cook your proteins as required. add in any vegetables along with a strong grip of salt, and sauté for 2-3 minutes. once they are both 80% of the way finished, add your noodles (1 package) and prepared sauce, along with reserved cooking water (¼ cup) as needed to adjust the thickness. stir fry for 1-2 minutes, until the sauce clings to the noodles. season to taste with salt and white pepper.
