saffron rolls with labneh frosting

Instructions
dissolve the saffron threads (1 pinch) in your warmed milk (1 ½ cups) and set aside while you prepare the remaining ingredients. the milk should turn a golden yellow color within 2-3 minutes
combine the ingredients for the dough, optionally in a stand mixer, and once it comes together – turn out onto a well floured surface and knead for 10 minutes.
let the dough rise for 1 hour at room temperature in a well oiled bowl, and in the meantime, prepare your filling.
once risen, roll out into a large rectangle (about 18x12) and spread the filling. roll lengthwise. optionally, transfer to the fridge for 5 minutes to firm up the butter – this makes it much easier to cut into (12) individual rolls.
place all rolls into a baking dish lined with parchment paper, and cover with a damp cloth. allow the rolls to proof at room temperature, until doubled in size.
bake at 350°F for 30 minutes. once baked, allow the rolls to cool while you prepare the frosting.
serve warm, would pair quite nicely with a hot chai :)
